Chef Gordon Ramsay in Mid Sussex

CHEF Gordon Ramsay shed his grumpy image for charm as he swapped the F word for the H word while filming a Christmas television show in Mid Sussex.

Master cheesemaker Mark Hardy taught Gordon how to make Halloumi at award - winning High Weald Dairy on Tremains Farm in Horsted Keynes.

Mark and Sarah Hardy, hosted Gordon Ramsay and showed him how to make the Greek cheese for the programmes's focus on 'Greeks versus Moroccans'.

Despite Gordon's reputation for swearing Sarah said that he had a 'gentle air' and added: "He was a very charming man – not at all the persona we all think we know and love to hate on TV."

Gordon also signed a copy of World Kitchen, his latest cookery book, for the Hardys saying: 'A big thank you for teaching me to make the perfect Halloumi'.

Viewers will see the session on December 29 at 9pm on Channel 4.

While he was there, Gordon tasted some of the High Weald classic cheeses, including Saint Giles and Tremains Cheddar and said he particularly liked the Smoked Duddleswell.

Mark Hardy, who stars with Gordon in the programme, said: "Gordon got the hang of it in no time and seemed to enjoy the process of making Halloumi, which is one of the quickest cheeses to make, being prepared in just four to five hours."

Filming went on for four hours and many cups of tea were consumed while Ramsay performed before the cameras.

Ramsay's visit capped a successful year for the dairy. One of its cheeses was chosen as the fifth best in the world at an international competition.

About 2,500 cheeses from 34 countries were entered into the World Cheese Awards in Las Palmas, Gran Canaria. The dairy also won Best British Cheese and Best English Cheese trophies for its Saint Giles product.

The food entered into the competition was made by Michael Wisdom, one of the dairy's cheese makers.

More than 150 judges sampled the 2,440 entries.
